Rice Crispy Goodness

First off - Thank you Joce for this amazing recipe. I mean it's not rocket science, but you sure are a genius.

Second off - This isn't really a recipe that you all haven't seen before. It's just a new spin on an old favorite.

Okay. This has seriously been a life-savor for me in these last few weeks of pregnancy. It's the little things that get you excited and distract from the monotony of waiting. While visiting Bart's family in Southern CA a month ago, his Aunt Jocelyn showed us how to make microwave rice crispy treats. I know, microwave? Don't jump to conclusions! It's not like trying to make a smore in the microwave, it's much better.

Ingredients: butter, marshmallows, and rice crispies

It's a 1:1 relationship, so if you want 1 serving, you do 1 of each ingredient. If you want 2 servings, do 2.

Step 1: Melt 1 Tablespoon of butter in microwave safe bowl. (about 25 sec)

Step 2: Coat 1 cup mini marshmallows in that butter.

Step 3: Microwave mallows for about 25 sec. They will puff up, so then you'll stir them until smooth.

Step 4: Add 1 HEAPING cup rice crispies to the bowl and stir.

Voila! Here you have 1 person portion of rice crispie treats! There's only one bowl and one spoon to get dirty, no pots and pans, no wax paper, no messy fingers shaping them, and no over eating! (Let's be honest, who really eats all of the treats when you make a full batch??)
